EASY SNACK RECIPE: HIGH PROTEIN PIZZA MUFFINS (GLUTEN FREE!)

 

When I tell you this recipe is easy, I am not exaggerating one bit. I hate finding a recipe called easy then finding out it requires 3 pans and an ingredient I’ve never heard of before. Potentially the hardest part of this recipe: you need tapioca starch and you may not have that on hand already. However, it’s typically easy to find in any standard grocery store!

This high-protein snack is something we always have baked and ready to eat at our house. My toddler loves it and I add one or two of these pizza muffins to my meal prep as a snack daily. 

The absolute best part: all this recipe requires is throwing all ingredients in a blender and then a muffin tin. Minimal dishes, some easy protein, and a snack that feels far more indulgent than it is! 


EASY PROTEIN PIZZA MUFFIN RECIPE

PREP TIME:  10 minutes || COOK TIME: 30 minutes || Makes 12 servings

WHAT YOU NEED:

  • 1C cottage cheese (I use full fat but you could substitute for 2% or fat-free; macros will change)

  • 3 eggs

  • 1C tapioca starch

  • 1C + ½C mozzarella cheese

  • ¾C marinara sauce or pizza sauce

  • Salt + pepper to taste 

WHAT TO DO:

  • Preheat oven to 400℉

  • Add cottage cheese, eggs, tapioca starch, and 1C mozzarella to blender and blend until smooth.

  • Oil the muffin tray and fill each well halfway with muffin batter. Top each muffin with 1TB of marinara sauce and a pinch of mozzarella cheese (from the reserved ½C)

  • Bake for 30-35 minutes until golden brown on top

NOTES:

  • For some added protein, top each muffin with turkey pepperoni before baking (4g fat, 9g protein per 30g pepperoni)

  • I’ve made this recipe countless times now and have subbed parmesan or cheddar cheese with similar great results! Don’t be afraid to sub in another cheese if you don’t have mozzarella.

  • I also find baking time may vary based on your desired texture. With a shorter baking time, the muffins are chewy and you get the texture of the tapioca flour coming through fully. With longer baking time, they’re a bit denser and more like traditional pizza crust.
